Lava Flow Sorbet - Flora Foodie

Lava Flow Sorbet

Piña Colada sorbet.  With strawberry sauce on top.  What else can I say?
 
This recipe is inspired by one of my Hawaiian treats!  I had a couple Lava Flow drinks during my trip (spiked and virgin versions, both amazing!)  They’re piña coladas with some kind of amazing red fruit puree poured down the sides and bottom of the glass to look like lava. 
This sorbet is so simple. Pineapple juice, coconut milk, and a little vanilla in an ice cream maker.  Topped with  pureed strawberries.  All natural, no added sugar, and incredibly rich and satisfying.
 
The really hard recipe:
serves 6
2 C pineapple juice (freshly squeezed if you have a juicer! sooooo good!)
1 C coconut milk
1 vanilla bean (or 1 t vanilla extract) (trust me – vanilla + pineapple = wonderful)
3/4 C strawberries
A couple comments about vanilla beans: yes, they’re expensive.  I use them sparingly, but in a recipe with four ingredients they will shine.  And don’t let any of it go to waste! For a recipe like this where you scrape out the beans, save the pod.  A few ideas for the leftover pod: 
  • add the whole pod to a pot of rice pudding, mulled cider or wine, hot cocoa – the leftover beans will come out in the warm liquid, and the pod will help flavor it
  • cut it into smaller pieces, and put a little piece in a french press when making coffee, or throw it in a cup of tea
  • put the whole pod in a container with sugar and let it infuse for vanilla sugar 
  • same thing as above but with vodka for vanilla flavored vodka 
Cut vanilla pod down the center and scrape the vanilla beans out.  Combine with the pineapple juice and coconut milk and refrigerate until cold; then pour in ice cream maker until it reaches sorbet consistency.  Often sorbets don’t get firm enough in an ice cream maker, so you have to freeze it to finish the process.
 
If you don’t have an ice cream maker, just mix everything together in a glass storage container and freeze.  Then just blend it up for a minute before eating to break up little crystals that form and make it nice and creamy.
 
Meanwhile, puree strawberries.
