Black Bean, Sweet Potato & Soy Chorizo Soup

Good day!  I hope everyone had a happy holiday!  My holiday was a bit unconventional with my new niece and my sister still in the hospital.  But Christmas at the hospital turned out well!  I got to hold Molly for the first time Christmas Eve.  🙂

 

Time for some warming soup.  Spicy soup heats you up during cool winter! 

These are so many of my favorite things.  Combined.  In a warm and cozy soup.

I had planned a very similar soup on my gigantically long list of blog ideas.  But then I bought this Latin Style Black Bean Soup from Trader Joe’s and really did not like it.  Sad.  There is no texture whatsoever.  This is just drinkable beans.  Gross.  Nobody wants that.  Sorry, TJ’s, I sing your praises enough, but this soup needs some help.


So that’s what I gave it.  Much needed help.  In the form of whole black beans, cubed sweet potato, yummy and soy chorizo.   Mmmmmm.

I’m kind of proud of myself for creating this soup too.  I made it right after I first hurt my finger when I really didn’t like moving any more than was humanly necessary.  If you’re looking for a one-handed recipe, this is it.  I just poured the soup, soy chorizo, and pre-cut sweet potatoes in a pot and cooked them.  That was an easy meal.  Four meals, actually.  I’ve refined the recipe a touch though, since I can use both hands now.  If you have two hands available, I recommend you make this version:


serves 4

1 box Trader Joe’s Latin Style Black Bean Soup
1/2 C soy chorizo
1 yam, peeled, cubed, and steamed
1 can black beans, drained and rinsed
cilantro for garnish
salsa for garnish

Pour everything into a large saucepan and heat over medium-low heat until hot.  Top with cilantro, salsa, a squeeze of lime, avocado, or maybe even some chips!


Pretty easy, right?  And just check out the nutrition facts!  This soup is LOADED with fiber.  It’ll warm you up and keep you full!
