Chipotle Roasted Sweet Potatoes

 
I have a new obsession.  I already posted it, but the obsession has grown exponentially since that day.  Earth Balance + chipotles in adobo.  Sooooo good.

I first used it on the buttery chipotle crostini I made to go with my split pea soup!  Remember that?  No?  Well, it was delicious.  Look into it.

Since then I’ve been putting this delicious concoction on many things.

New favorite?  Sweet potato rounds.  Oh my gosh.


Spread some buttery chipotle goodness.  Roast.  Devour. 

Yeah . . .

serves 2 (or 1 as the main part of a meal)
1 medium sweet potato or yam or whatever you want
1 t Earth Balance margarine, softened
1 chipotle in adobo

Preheat oven to 425 degrees.

Mash up chipotle with softened Earth Balance.  Slice yam, spread margarine on both sides.  Place on a foil-lined baking sheet and roast for about 25-35 minutes (depending on how thick you slice the sweet potato), until you can easily pierce the potato with a fork.
