Lemon Pepper Wine-Braised Baby Broccoli

I have a delicious veggie dish for you today! 

I don’t know why this baby broccoli hasn’t made it into my go-to side dish repertoire because it is awesome and delicious, and I devour it whenever I make it.   

But it’s nice to step out of the box once in awhile.  This baby broccoli is a much more exciting veggie to me than my normal stand-by dishes.

Plus how fancy does wine-braised sound? 

But it’s really not.  It’s pretty damn easy.  And makes for a wonderful excuse to open a bottle of wine, eh?

serves 2
1 bunch baby broccoli
1/2 C white wine of choice
1/2 lemon, juice + zest
2 t Earth Balance margarine
1/2 C panko bread crumbs
1/4 t red pepper flakes

Put broccoli, wine, and lemon juice in a large nonstick skillet over medium-high heat.  Cover the skillet and allow to cook until the wine is mostly absorbed, about 7-10 minutes.  Try not to check too often cause letting the steam escape will make your broccoli cook slower.


Meanwhile, heat a small skillet over medium heat and add the margarine.  When melted, add the panko, lemon zest, and pepper flakes.  Stir occasionally until panko is browned. 

Sprinkle bread crumbs over broccoli before serving.
