Sriracha Soy Curl Wrap

Hey folks!  Sorry I’ve been slow with the posts lately.  I’ve spent my blogging time recently trying to learn some new tricks to take things up a notch here.  Which takes me forever because I’m a blogging dummy! 


But I made one big accomplishment: check out my recipes page!  Now every single recipe has a photo and a link.  Whew.  Took waaaay longer than it probably should have.  And still needs some fixing-up.  Please please please let me know if there are any problems with it, because I spent the last two days sorting out glitches that I don’t understand and I’m not 100% positive they’re resolved.

I have also been making some food lately.  Der.  Two exciting upcoming posts that required a time-commitment: home-made kombucha and the most. amazing. vegan. buffalo. mozzarella. ever.  I’m allowed to be so dramatic because it’s not my recipe, and I’m still in awe.  You won’t believe this stuff. 

Now that I’m done with all that, I’m back to regularly posting yummy treats! 

Today I’ve got a quick wrap recipe for you.  I realized after I made it that it’s way similar to my Spicy BBQ Avocado Pita Sandwich.  But really.  Can you have too many spicy avocado-laden wraps?  I think not.

Get ready to see many more soy curl recipes soon because I may have ordered this: 

 


Yup.  

serves 2 
(yields 1 large wrap if you use 1 large tortilla, but you can easily put the filling in 2 smaller tortillas)
3/4 C soy curls
1 t vegetable oil
2 t sriracha
juice of 1 small orange (or 1/2 large one)
1 t pure maple syrup 
1 tortilla (I used whole wheat – use whatever you like!)
1/2 avocado
2 t vegan mayonnaise 
1/2 C shredded lettuce

Rehydrate soy curls in a bowl of hot water for 10 minutes.  Then remove from the water, drain, and wring out the extra water.  



Heat a small skillet over medium-high heat, add the oil, and add the soy curls.  Cook until they’re a little golden on each side.  Then add the orange juice and sriracha and cook until the orange juice absorbs into the soy curls.  Add the maple syrup just before you turn off the heat and stir well. 

Lay out your tortilla and add the avocado, soy curls, lettuce, and mayo.  Wrap it up! 

Nutrition facts per wrap: Calories: 252; Calories from Fat: 123; Total Fat: 13.7g; Saturated Fat: 1.8g; Sodium: 145mg; Total Carbohydrates: 26.2g; Dietary Fiber: 6.6g; Sugars: 6.7g; Protein: 8.4g

    I just wanted to say I made this today and it was the most amazing thing ever. Except I couldn’t find soy “curls” but I found soy “slices” which are the same just different shape. I also put chipotle in my vegenaise. So amazing.
