Ahhhhh, happy Friday, sweet friends! We made it through another week, hoorah!!!
I’m especially excited for this weekend because it’s my BIRTHDAY WEEKEND! It’s my 30th, so I’m going all out. Festivities all weekend long. Tonight Preston’s treating me to a super fancy date night, tomorrow is going to be an epic day of childish shenanigans with my friends, and Sunday is THE day with some self pampering and family time. Seriously looking forward to it.

Alright, let’s talk about this golden beet turmeric juice. I am completely in LOVE with beets. I love them more and more as time goes on too.
But I know some people are really not fans (Preston being one of them), so I wanted to make a beet juice to try to win over some beet haters. Using golden beets is a great start because it just takes away that scary color.
I packed this juice full of some other strong flavors, including one of my juicing FAVES, pineapple, because it’s strong and sweet but still incredibly healthy. I love the result and really think that even beet haters will like it. (Tricked Preston 😉 )
It’s an awesome way to start the day, there are SO many fantastically healthy goodies in here. Soak up some serious nutrients and the powerhouse turmeric root that is an anti-inflammatory winner. Have you ever seen turmeric root? It’s those funny looking little orange-ish nubbins. If you cut them open they are BRIGHT orange. My regular grocery store just started carrying them, which is so exciting! I used to only find them at Whole Foods. You just have to scrub them and can juice them with the skin on 🙂 If you can’t find any, just sprinkle some ground turmeric in your juice and stir up!
- 4 golden beets
- 2 inch-long pieces of turmeric root
- 1 blood orange, peeled
- 1 C chopped pineapple
- 1 lime, peeled
- 1 meyer lemon, peeled
- Juice everything!
