How long has it been since I posted a What I Ate Wednesday post???
… no really. I have zero clue.
BUT in my panic about a third of the way through Blogmas when I realized I had no idea what the hell to post all month long, I did a nice brainstorming sesh and totally intended to post a WIAW post during Blogmas. And then didn’t.
Largely because I forgot.
I know it’s not the most thrilling post (and the pictures are usually pretty horrible), but I still love reading WIAW posts. So… fingers crossed you do too.
PLUS I forgot what a helpful little tool it can be, so I can see things like how DEVOID OF PRODUCE my meals were yesterday. For real. Look at that. Oh, well, just do better today!
So here are yesterday’s meals!
Chia pudding for breakfast. This was a simple one: 1 C unsweetened vanilla almond milk + 1 scoop Perfect Fit protein powder + 3 T chia seeds, soaked overnight.
Vegan jerky for a snack. I actually had this pretty early in the morning because I was just craving something savory! I love this jerky. It’s not cheap so I’ve only bought it a few times, but it had to make a stocking stuffer appearance this year for me and my dad 😉
Simple pasta for lunch. This was just leftover plain pasta with some Beyond Meat crumbles in it for lunch. Nothing special. And nowhere near enough sauce. But again… insanely busy week so I’ll take what’s easy and move on.
Unpictured protein shake for a snack while I was driving home. I was RAVENOUS (because white pasta + no veggies = super unfilling lunch) at the end of the day, so I mixed a quick protein shake for the drive home before boyfriend and I worked out. (YAY, we had time to squeeze in an awesome boxing workout last night.)
AMAZING DINNER. Oh man, I HAVE to blog that fish recipe. P picked up some fish for my dinner and I swear, the hunger while working out gave me an awesome idea for what to cook for the rest of the meal. I made super simple orzo with scallions (I’ll have to post more about my scallions, but I’ve been keeping a little bunch in a glass of water and they are growing SO fast and they are the strongest freshest scallions ever. So it was actually pretty onion-y and flavorful.) I lightly breaded tilapia in panko and pan-cooked it. And made a simple lemon and white wine beurre blanc that turned out AH-MAZ-ING! Ugh, it was delish. Plus I mixed up Trader Joe’s broccoli and kale slaw to go with. Super good (and I love a salad that lasts until the next day.)
