Hi frieeeends! Who’s having a lovely three day weekend?
I just sat down from doing this week’s meal prep and feel like I could take a twelve hour nap. 😉 It actually didn’t take long at all, but boyfriend and I went for a long walk in the rain this morning, cleaned a bit, ran a ton of errands, meal prepped and did laundry. Soooo I could totally pass out.
BUT I wanted to get up last week’s meal prep with a nice big list of ideas! We also did a full meal prep – everything except the finishing touches on dinner and my breakfasts. So here’s the weekly meal plan, workouts, and some meal prep ideas!
Monday | leg + booty workout!
Tuesday | V-day, rest day!
Wednesday | the same arm + back workout from last week, with jump rope intervals (loved it)
Thursday | leg day!
Friday | arms + ab circuit workout
Saturday | rest day
Sunday | cadio leg workout (an awesome plyo-heavy leg workout I made up)
Was a really good week of workouts, but I canNOT motivate myself to get outside to run during the cold and the rain. I’m over it. So it’s been a very strength-training heavy last couple weeks, and I’m trying to sneak in cardio in bouts of plyo or jump rope intervals when I can. Womp, womp. #pleasecomebackspring
Dinners this week were a little heavy on frozen shrimp. 😉 I had a big Costco-sized container of breaded shrimp we got for a little party we hosted awhile ago and didn’t use them. AND boyfriend got me an AIR FRYER for my birthday which just came last week. And I quickly realized that air frying frozen shrimp is INSANELY fast (six minutes from frozen!) and they turn out so perfect. So that’s a little bit boring. But whatever… Also, get ready for air fryer recipes. Because AIR FRYER!!!
Monday | amaaaaaazing pad see ew from Gimme Some Oven plus tofu with a rad nah test sauce (almost there!!!)
Tuesday | Cooking Light sweet potato gratin + simple fish
Wednesday | TJ’s honey walnut shrimp (it’s pretty good. Way too much sauce though.)
Thursday | leftover pad see ew + breaded shrimp
Friday | gift-wrapped sesame-soy tilapia (as Leslie Knope would say… I cannot over-hype this enough. AMAZING. Also did one for P with filleted chicken.)
Saturday | I was solo and didn’t really eat dinner after some afternoon snacks…

the meal prep:
Our meal prep game last week was serious, and it was SO helpful! We fully prepared Preston’s breakfasts, both of our lunches, two snacks a day for both of us, and I pre-chopped a bunch of veggies for dinners during the week. I just ate hot cereal for breakfast, so no prep required… Here’s what we did for a full week of meal prep!
- tuna casserole for my lunches
- chicken salad for boyfriend’s lunches (tho it was a bit too mayo-heavy so we won’t do that again… but a healthy version will for sure be a repeat!)
- apple + PB for a few morning snacks for both of us
- apple + string cheese for a few of boyfriend’s snacks
- celery + peanut butter for a couple of boyfriend’s snacks
- celery + TJ’s artichoke jalapeno dip for boyfriend’s snacks
- protein powder + almond milk for my afternoon snack everyday
- for dinners: I pre-chopped the veggies for the pad see ew and the gift-wrapped fish packets
- egg muffins for boyfriend’s breakfasts
- pickled jalapenos… just for the hell of it! 😉
