4 Quick & Easy Weeknight Meals

Four simple, HEALTHY, and incredibly fast dinners you can make any weeknight. All require minimal cleanup, too! Perfect easy weeknight meals.

Most of the dinner recipes I post here are pretty fast meals. Because that’s what I like to cook. You’ll rarely find me make anything that takes longer than an hour or too much prep ahead of time.

I just don’t enjoy it. And I have a busy schedule. Five days a week, I need a quick meal!

But I want to share more meal plans with you. More super simple dinners that don’t deserve a full post but are really helpful.

I have a few different ideas on how to share these with you, so we’ll keep it mixed up a bit! Today we’re starting with a video of four meals I actually made a couple weeks ago for my Monday through Thursday dinners.

Foil packet tilapia: recipe here. You’ll see I switched up the veggies a little. You can pretty much use anything you like – just keep in mind it doesn’t cook long so only use veggies you like after a short steam 🙂

Foil wrapped brussels sprouts: Chop Brussels sprouts and toss with garlic, oil, and your favorite seasonings (or the remnants of some salad dressing like I used 😉 ) Wrap in foil and cook at 400 degrees for about 25 minutes, until soft. Chop Tofurkey (or real) sausage, spread on a piece of foil, and throw in the oven with the Brussels sprouts for the last 10 minutes until crispy. Toss together. Add fresh herbs if you like!

Seared tuna: tuna recipe here. cucumber salad recipe here. For the mango salsa, toss 1 chopped mango + 1/2 chopped red onion + 1 minced jalapeno + juice of 2 limes + a generous pinch of salt.

Marinara: Saute 1 chopped onion + 3 cloves minced garlic in a small amount of avocado (or other vegetable) oil. Stir in 28 oz can of tomatoes (I used crushed) and 8 oz can of tomato paste. Add salt to taste. I also added about a tablespoon of dried oregano but forgot to mention it in the video.
