YOU GUYS! Remember when I used to do WIAW (What I Ate Wednesday) posts all the time? Well, I figured Blogmas should include at least one. So that’s pretty much what today is.
Let’s jump right in with what I ate yesterday!
First up, I was a bad kid and slept in pretty dang late. ☹️ I’ve been trying to get up early lately and do yoga and be a useful human being in the mornings, but the first couple days of this week were ROUGH and it didn’t happen. (This morning went a bit better so here’s hoping…)
Anyway, so that meant that coffee was the first thing I had, and I didn’t eat a real breakfast. But I do keep a KindBar or Larabar in my office for said occasions…
Lunch was much better though because I made double servings of our dinner the night before so we could have super satisfying leftovers for lunch! I had a small salad, leftover potatoes (cooked in wine in my Instant Pot, sooooo. yeah. recipe coming soon, but it still needs a touch of work.), and tilapia.
For an afternoon snack at work, I had a protein shake with almond milk. And YES, I still have some Perfect Fit protein in COCONUT!!! I have been very slowly finishing off this last tub. It’s sooooooo good! And the huge triumph was avoiding the candy dish at work. It is SO HARD and last week I had at least one piece everyday, so this week I’m trying to lay off.
Dinner was huge and fast and super satisfying. We had a ton of leftover white rice from hosting friends over the weekend (thus the enormous serving of it… not sorry.) And I bought a new (at least to me) Gardein sweet and sour “pork” that was fantastic, and whipped up some asparagus in a jarred black bean sauce.
And for dessert I had a cup of tea and two pieces of sugar cookie dough. Yep, uncooked. 😉 I prefer dough to actual baked cookies hahaha. So why not!
And that’s it! Let me know if you like these what I eat in a day posts and I’ll do them a little more often! Once a week was just too much, but I could do them once a month or so. I know I love a little sneak peek into other people’s eating habits 😀
