  • Cilantro Latkes with Zucchini

I must have been in a Cooking Light mood this week – here’s a second recipe from Cooking Light, which I absolutely love.  I’m very happy to have discovered that I don’t notice some shredded zucchini in latkes – so why not add them?  Extra fiber, pretty green color, and less guilt for eating crispied […]

  • Apple Pie Oatmeal

Here is a really fun way to spice up your morning oatmeal!  Add apple pie spices and sauteed apples onto cinnamon-filled oatmeal.  Yum!    This apple pie topping is adapted from a Cooking Light recipe for a topping to French toast, which I started putting on everything.  On top of oatmeal is a huge success.

  • Wonton Soup

If you’ve never made wonton soup from scratch, I definitely recommend it!  It’s actually fairly easy.  And for something that tastes so wonderfully hearty and comforting, it’s incredibly light.

  • Blanket-Wrapped Baby Broccoli

I’m always looking for ways to make my vegetables more interesting and exciting (who isn’t, right?), and this is one of my newest finds.

  • El Pepino

Happy St. Patrick’s Day!  For those of you, like me, who don’t want green beer or Irish cream to celebrate the day, here’s a delicious green cocktail for you to toast with!   No, this has nothing to do with the Pepino melon I featured on my first New Flora post.  In that post, […]

  • Spinach & Artichoke Dip

Happy National Artichoke Hearts Day!  I am incredibly excited about this peculiar and probably made-up-for-no-reason holiday.  I absolutely LOVE artichokes.  I never get sick of them.

  • “Fisher Price” Oatmeal Peanut Butter Balls

One of my favorite treats growing up!  My mom calls these “Fisher Price” because the recipe actually came with some Fisher Price toys that my sister and I had.  The original recipe is filled with tons of honey, instant dry milk (gross!), and was impossible to make with natural peanut butter.    Now they’re revamped!  […]

  • Brown Sugar Crusted Grapefruit

This is not a recipe at all, but just an easy wonderful secret to finding grapefruit irresistible — adding sugar, of course!  When I was growing up, this was the only way I would even touch a grapefruit.  My dad would take a half a grapefruit and pack brown sugar on top.  Then he’d broil […]

  • Recipe Review | Vegan Crab Cakes

OMG these are so good!  But I didn’t change a single thing in this recipe, so I’m calling it a recipe “review.”  I got this recipe from the Skinny Bitch cookbook – Skinny Bitch in the Kitch.  I just can’t believe how delicious they are.  Not the healthiest thing on this blog, but so worth […]

  • Rosemary Polenta "Fries"

I haven’t cooked with polenta very much at all, but it’s quickly becoming a favorite.  It can be rich and creamy OR you can let it set and cut it into slices and shapes, crisp them up – so fun!
