Salted Rosemary Dark Chocolate Peanut Butter

A friend of mine emailed me awhile back with a website that sells gourmet flavored peanut butters.  Awesome flavors, from spicy savory Thai flavors to pina colada.  Weird.  Intriguing. 

I replied to him that instead of spending that much money, I could just replicate some of those flavors.  He said that’s pretty much what he was going for when he emailed me.  Ha!

Well, it worked.

It was also pretty convenient that he just bought a house after that, so I planned on making this as a housewarming present. 

Then he went and got engaged too!  So I upped it to two flavors. 🙂  I’ll post the second one tomorrow. (though the pictures give you a sneak peek!) 


First up is the one that seemed the safest to me – don’t want to go wasting ingredients on something you’ll never really eat!

Rosemary dark chocolate.  I added salt because that just seemed awesome. 

It is so delicious, I can hardly stand it.  I made a big ol’ batch and kept a little for myself.  Obviously

All the ingredients are in the title, and the recipe is just this: blend together to your taste preference. Simple.  Yummy.  Fast.  And a beautiful present.

I know what my default Christmas present will be this year.


yields 2 C
about 32 servings, 1 T each
1 1/2 C peanut butter (crunchy or creamy would work)
1/2 C dark chocolate chips
1 T + 2 t fresh rosemary
1 t kosher salt

Soften the chocolate a little bit first by microwaving for thirty seconds.  Then add everything to your food processor and blend away.

Obviously, it’s pretty easy to make as big a batch of this as you want.  You can also adjust the seasonings to your own preference.


So you might be wondering what the hell you’re going to do with salted rosemary dark chocolate peanut butter, eh?  Well, here are a few ideas:
>> spread on toast (that’s the only thing I’ve done so far – hot crusty French bread toast, mmmm)
>> put in a crepe
>> spread in a croissant – try my simplest chocolate croissant recipe
>> pb&j sandwich – seriously, I think this would still be great.  berry jams actually go really well with rosemary.  maybe even my basil berry jam!?!? dang.
>> apple dip.  OMG I need to buy apples!
>> if you’re the cheese-platter type, add this to the next cheese plate you put together!
