Good morning, folks! Happy Monday :)Hope you all are doing well and had a good weekend! I had a great weekend. One of those ridiculously productive weekends but I also rested plenty. Yesterday was the first day I really felt healthy again after my flu all last week, so I was riding that high pretty well and had a great day. For now, here’s a fantastic simple rice recipe! It’s an imitation of the saffron rice I order at my favorite local Indian restaurant, Bombay. But aside from the saffron, which is pretty subtle, there’s really not much about this rice that makes me think of Indian food. It’s simple, lightly flavored, and delicious, and can pair with anything! Last night, Preston cooked up a white wine and lemon chicken breast to go alongside, and I cooked up a leftover garbanzo bean veggie burger from last week.
This rice goes well with anything, but just feels more special than a plain grain.
So here’s the recipe, hope you enjoy 🙂
- 1 T Earth Balance margarine or coconut oil
- 1 shallot, chopped
- 1 C basmati or Jasmine rice
- 1 t saffron threads
- 1 1/2 C water
- 1/2 large carrot, shredded
- 1/2 C frozen peas
- salt and pepper to taste
- 1/2 C chopped raw cashews
- Melt Earth Balance in a medium saucepan over medium-low heat. Add the shallot and cook for 3 minutes, until turning translucent. Add the rice and turn to coat in oil or margarine and toast slightly for about 2 minutes. Then add the saffron and water, and cover to simmer for about 25-30 minutes.
- About 15 minutes into the simmering, add the shredded carrot. You can just throw it on top so it steams and softens a bit or you can mix it in. You just want it to soften a little.
- When the water is absorbed and the rice is cooked all the way through, throw in the frozen peas, cover again and let sit five minutes so the peas can soften.
- Uncover, season to taste with salt and pepper, and then stir in the cashews.
