Blueberry & Strawberry Cornmeal Pancakes

 

A few days ago while I was looking around other food blogs, I saw a couple references to a very weird holiday – National Peanut Butter Day!  Apparently Tuesday was it!  I was very intrigued, and had to look up more weird food holidays, and found this gigantic list of them. 

Now I don’t know who makes this stuff up, or if there’s any rhyme or reason to these holidays.  But today is National Blueberry Pancake Day, and seeing as blueberry pancakes are one of my favorite weekend morning meals ever, I decided to comply. 
Blueberry & Strawberry Cornmeal Pancakes:
serves 4
 
1/2 C whole wheat flour
1/2 C cornmeal
1 1/2 t baking powder
1/2 t baking soda
1/2 t salt
1 1/4 C almond milk
3 T agave nectar
1 1/2 t vanilla extract
1/2 C blueberries
1/2 C strawberries, sliced
 
I once had blueberry and blue cornmeal pancakes at a restaurant.  They were delicious.  I’ve re-made them a lot with regular cornmeal, but just yesterday I found blue cornmeal in the bulk bins and had to get it for this recipe.  Regular cornmeal works just as well — and, as fun as the blue cornmeal is, regular cornmeal is actually much prettier here!
 
Sift dry ingredients together.  Add wet ingredients and combine well.  Then gently fold in fruit.
 
I’m sure you know the rest — heat up a pan on medium-low heat, spray with cooking spray.  Pour small ladles of batter in.  Cook until top looks dry and bubbles start to form.  Flip, and cook another minute or two, depending on the size of your pancakes. 

 

That’s it!  Yummmmmmm. 
Blueberry Syrup:
For even more beautiful blue, here’s a quick blueberry syrup to pour on top of those pancakes!
serves 2
 
1/4 C blueberries
1/4 C pure maple syrup
 
Place both ingredients in a small saucepan over medium heat.  Heat for five to ten minutes, until the blueberries have burst.  The syrup will turn a bright purple-y blue color and start to bubble.  It’s delicious served just like that, or pureed until smooth.
