I try really hard on this blog, and for all of my meals, to make food that tastes wonderful but is nutritious. I never force myself to eat something I don’t like, except maybe if it’s really healthy.
Well, the flip side of this philosophy is that I don’t usually eat things that are devoid of nutritional value unless I really love them.
This is one of those recipes.
My chocolate croissants have absolutely zero redeeming nutritional value. They’re full of sugar, white flour, fat, and chocolate.
So why am I putting them on my healthy recipes blog? Because I’ve just gone through a breakup and can have a big splurge if I darn-well want to?! Yeah, that’s probably part of it.
But also because they’re wonderful. And so fast and easy. And because even a healthy diet has to include some serious splurges, right? Well mine does anyway. Let’s face it, that’s absolutely part of why I eat well most of the time.
So here’s how easy these puppies are!
serves 4
2 5″x5″ sheet vegan puff pastry*, thawed
2 T vegan chocolate chips**
1 T soy milk
*just look around for pastry that’s made with vegetable shortening instead of butter
**if you use dark chocolate, you can argue there’s a little redeeming nutritional value – but this recipe isn’t about making the healthier choice. It’s about making the choice you want to make. And I want semi-sweet chocolate. Mmmm.
Preheat oven to 425 degrees.
Lightly flour your cutting board. Put puff pastry sheet on board, top with a little more flour, and roll out until very flat (try to keep it in a rectangle or square shape though).
Cut puff pastry in half. If it’s more a rectangle than a square, cut down the long side so that you have two long thin rectangles. Put 1 T chocolate chips on each half, and roll or fold pastry up however you like.
Using a pastry brush (or your fingers), brush soy milk along the last edge of puff pastry, then crimp any open edges together with a fork. Brush soy milk on top of pastry.
Bake in oven for about 12-15 minutes, until puffy and golden brown.
Savor every single bite.
