Slow-Cooked Soy Chorizo & Bean Chili

 
I made a giant vat of chili.
 
Despite the heat.  It’s never too hot for a good chili. 
 
I am talking enormous amounts of smoky comforting chili goodness that is currently taking over my fridge, freezer, and belly.
 
I took this over to my parents’ house in the morning before work on Friday – they live near my work, so I ran home to enjoy this deliciousness for lunch.
 
And I planned on taking a can or two of tomatoes from them cause they buy them in bulk and I decided last minute that canned tomatoes would be awesome in this.  But my mom had a basket of over-ripe but gorgeous tomatoes from her garden!  So I threw those in too. 
 
 
This is one of those meals.  Just throw in anything that would like to eat in a chili if you find it in your house, garden, farmer’s market – whatever.  Beans, some meat-sub if you want it, veggies, flavorings.  So. simple. 
 
The ingredients below are what I used:
 
serves 12
6 oz soy chorizo (1/2 Trader Joe’s package – my favorite brand!)
2/3 C ground meat sub (I love Gardein)
1 15-oz can black beans, rinsed and drained
1 15-oz can pinto beans, rinsed and drained
1 15-oz can diced tomatoes
1 C fresh tomatoes 
1 onion, chopped
2 bell peppers, chopped
1 T chipotles in adobo
1 T ground cumin
5 cloves garlic, chopped
3 C vegetable stock or water*
*it might look a little watery in the pictures, but I made it with 4C originally, so I already cut the recipe down!
 
To make: throw everything in your slow cooker.  Cook on low 3-5 hours.
 
Soooo I’ve already eaten several servings of this.  Eat this plain with a little chopped cilantro on top.  Or with corn bread on the side.  Or with grilled corn on top.  Or pour this over a baked sweet potato.  Mmmmmm foodie brain doesn’t stop!
