Alright, I have a second dessert post in a row for you. I have three wonderful savory recipes that I’ve been trying to get up, but I keep running into seriously stupid road blocks. Mostly because I’m being way slow this week.
It’s my last week at work before I start my new job and I think the mix of nerves about my new job and anxiety over getting everything done I need to do this week is making me stupid. For reals. I can’t seem to write a complete grocery list or make sure the Thai basil I pick up is actually fresh or get myself to photograph anything before the sun goes down.
But today was my LAST day of work (I’m taking tomorrow off), so I’m hoping to get my shit together and get some recipes up in the next few days!!!
Obviously, dessert recipes have not suffered at all. I can do dessert in my sleep.
Especially when it’s four ingredients and takes just a few minutes to prep.
Like this awesome ice cream.
serves 6
2 cans lite coconut milk
1 pint strawberries
1/2 t xanthan gum
1/3 C maple syrup
To make: blend everything together. Refrigerate a couple hours until chilled. Pour into an ice cream maker.
Eat.
Anyway, I just got home from my last day of work and I’m minutes away from heading out for a celebratory dinner, so I’m off!!! Happy ice-cream-eating!
