Here is a really fun way to spice up your morning oatmeal! Add apple pie spices and sauteed apples onto cinnamon-filled oatmeal. Yum!
This apple pie topping is adapted from a Cooking Light recipe for a topping to French toast, which I started putting on everything. On top of oatmeal is a huge success.
oatmeal:
serves 1 (generously – this is more like 1 1/2 servings, but I like a really big breakfast)
1 C unsweetened vanilla almond milk
1 T vanilla extract
1/2 C rolled oats
2 t ground cinnamon
1/8 t ground nutmeg
tiny pinch ground clovesHeat almond milk in a small saucepan over medium heat. When steaming, add the rest of the ingredients and cook, whisking occasionally, until all the milk is absorbed. While it’s cooking, make the apple pie topping.

2 t Earth Balance
1 apple, thinly sliced
1 t cinnamon
1 t brown sugarMelt Earth Balance in a large frying pan over medium heat. Add apples and cook until they have sotened. When soft, add cinnamon and brown sugar and cook until the sugar melts and coats the apples.
