“Fisher Price” Oatmeal Peanut Butter Balls

One of my favorite treats growing up!  My mom calls these “Fisher Price” because the recipe actually came with some Fisher Price toys that my sister and I had.  The original recipe is filled with tons of honey, instant dry milk (gross!), and was impossible to make with natural peanut butter. 
 
Now they’re revamped!  And wonderful.  They’re a fairly calorie-dense food, but healthy calories!  Growing up, these were a dessert.  But now I’m thinking they’re a breakfast or pre-gym treat, along the same lines as my Chocolate Cherry Pie Breakfast Truffles.
here’s how:
yields 16 PB balls
1 C natural creamy peanut butter
1 C rolled oats
1/3 C brown rice syrup
1 t vanilla extract
1/2 C raisins


Note: brown rice syrup is a great natural sweetener.  It’s the same consistency as honey, but it does have a stronger wheat-y flavor, so I only use it with things like peanut butter that can stand up to its flavor.  You can sub any other natural sweetener, but you might need to add more oats to get the right consistency.

Quickly grind oats in a food processor, just until coarsely ground.   Then combine all ingredients in a large bowl.  Roll into one-inch balls.  That’s it!
When I was little, we kept these in the fridge – and if you used natural peanut butter, you should too!  But I recommend it no matter what kind you used.
