Easy Sesame Edamame Snack

It’s taking me awhile to adjust my eating habits to working out of an office – I was definitely spoiled in school for years with a flexible schedule, and then with working from home.  Now I need to plan healthy snacks and meals ahead of time and have something easy to pack for work so I don’t reach for pretzels everyday or my little chocolate stash when I want a snack.
 
Edamame is a great solution!  This is a little more exciting than just salt & pepper on them – but just as fast.  I saw this recipe years ago (I think on Eat This, Not That, but it’s been too long to be sure), and have never gotten tired of it. 
serves 5
12 oz package frozen edamame
2 t toasted sesame oil
1 t red pepper flakes (do half this is you’re not big on spicy foods)
1/4 t kosher salt
 
Boil a large pot of water over high heat.  Add edamame and cook for about five minutes.  Remove from water, immediately toss with all other ingredients, and enjoy!  
Or pack a big container full so you can grab a handful each morning of your work week. Use a smaller container to pack a day’s worth, then refill it when you get home from work so you’re ready for the next day!
