Ginger Sesame Carrot Slaw

Just a quick little post for you today! 
I needed a refreshing fast veggie dish for a hot and busy summer.  And one that doesn’t require turning on the stove at all.  You can whip this together in no time, and it is light and bright and filling. 
serves 1
3 carrots, shredded
1 T pickled ginger, thinly sliced
1 t apple cider vinegar
1 t agave nectar
1/2 t toasted sesame oil
1/2 t sesame seeds
 
 
Toss shredded carrots and sliced ginger together.  In a small bowl, combine vinegar, agave, and sesame oil, then pour over carrot mixture.  Top with sesame seeds! 
 
Simple but delicious!  New favorite go-to veggie for sure.  Enjoy!
