Marzipan Black Forest Soy Ice Cream

 
I cannot tell you how excited I am to finally have this ice cream!  I thought of this idea when my blog was still brand new, but I did an unusual ice cream flavor right off the bat, and wanted to have a little more variety before I did this one.   
 
Then I was finally ready to make it and even had all the ingredients ready in my fridge the week my boyfriend and I split up – and with most of my stuff in storage, my ice cream maker and I were also split up. 🙁   
But my ice cream maker is back, and I finally made this amazing ice cream concoction that I dreamed up months ago! 
 
Mmmmm marzipan!  Now I know that some people don’t like marzipan or don’t really know what it is.  It’s simple: it is candy made out of almond paste.  It is basically almond paste with a little more sugar added – just really sweet almonds.  So if you like that rich sweet filling in an almond croissant, you’ll love marzipan.  
 
 
But even if you don’t love that really-rich strong flavor, don’t write off this ice cream yet!  I’m blending the marzipan into my ice cream mixture so it’s a much subtler flavor than in a croissant.  (I’m also adding chunks of it in, but leave those out if you want!) 
 
serves 10
2 C unsweetened vanilla soy milk
1 C plain soy creamer
2 C frozen cherries, thawed
1 t vanilla extract

1/2 t almond extract

5 T marzipan or almond paste*, divided
1/3 C vegan chocolate chips
* know how I mentioned above that marzipan is just almond paste candy?  Well that means that either one would work well for this recipe.  Since almond paste tends to be more affordable and has less sugar, it’s a great choice.  I’m using it for the lower sugar content, but the taste still makes me thing marzipan. 
Blend creamer, soy milk, extracts, and 3 T of the marzipan together until smooth.  Then add cherries and blend just a little, leaving some cherry chunks (if you want).  Chop the remaining marzipan into small bite-sized pieces, measure your chocolate chips, and set those aside.
 
 
Pour blended mixture into ice cream maker until it is almost set.  In the last few minutes, pour in the marzipan pieces and the chocolate chips.   
 
 
Cherries + almonds + chocolate were made to go together.
