Prosecco & Pear Granita Float

Fresly pressed pear juice and prosecco granita. Melting away in a glass of more bubbly prosecco.
Lovely light summer dessert.  
Granitas are a perfect summer dessert.  The process is simple: take some kind of liquid (juice, alcohol, coffee/tea, flavored simple syrups, or any combination of those things), and freeze it.  But while it’s freezing, you occasionally scrape the frozen parts up so that by the time it freezes it makes these super-light fluffy crystals instead of solid ice.  
 
serves 2 (verrrry generously – this is probably an excessive serving, but it’s that good)
1 1/2 C fresh pear juice*
2 1/2 C sparkling wine, divided
1 T agave**
*use a crispier pear if you’re juicing at home – an Asian or Bosc pear is best. No soft Bartletts here, it’ll just turn to mush!

I started with some freshly pressed pear juice.  You can use any kind of juice you want (what doesn’t go with sparkling wine?!).  
But if you do choose to juice your own pears, buy extra!  I had to sneak a taste, and soooo badly wanted to drink it all up!  But I only had enough for this recipe (not that I’m complaining about this dessert.)
 
I call this a prosecco and pear granita, but you can use any kind of sparkling wine.  I didn’t actually use a prosecco, I used a cava.  But “prosecco & pear” sounded better than “any sparkling wine & pear.”  🙂 
 
Combine pear juice and 1 1/2 C of the sparkling wine, and then taste.  Since the flavor can vary based on the wine you choose, you definitely want to taste this to make sure that it’s the right level of sweetness.  Then add agave to taste.  Remember, you’re going to add more sparkling wine once this is frozen, so if you have a dry wine, you’ll want to have the pear/wine mixture on the sweet side. 
 
Freeze for about 3 hours, scraping the frozen parts up with a fork every hour. 
Then spoon the granita into glasses, and top with the rest of the prosecco! I recommend serving with a spoon and a straw – you still have bubbly drinkable prosecco, and your slushy granita is still spoon-able, but slowly melts into the wine.  
 
So much fun!
Add a pretty little pear slice for garnish 🙂
