Black Sesame Cashew Bites

 
This is actually a restaurant-remake fail.  Fail because it’s not even close to what I was going for. 
 
But you know what?  I loved the result anyway!  So now I’m posting them.
 
As they turned out, these are yummy little crunchy-on-the-outside-chewy-in-the-middle bites made of nuts and seeds.
 
A wonderful little energy-rich bite.  This can make a great pre-workout treat like my breakfast truffles.
 
yields 12 bites
2 T chia seeds
2 T water
3 T black sesame seeds
2 T normal sesame seeds
3/4 C cashews
1/2 C rolled oats
2 T agave nectar
1 t vanilla extract
 
Preheat oven to 325 degrees.
 
Mix chia seeds and water together and set aside.  They’ll gel up while you get everything else together.  Mix all other ingredients together.  When chia seeds and water form a gel, stir them into the mixture until well coated. 
 
 
Spoon into mini-muffin pan that you’ve lightly sprayed with cooking spray.  Pack the nut and seed mixture really well into the muffin pans. 
 
Bake for about 15 minutes, until the tops turn a little golden.  Remove from pan as soon as they’re cool enough to handle, place on cooling rack until completely cooled. 
So happy when a recipe I can see is totally failing turns out so well anyway!
