Ahhhh artichokes. One of my favorite things in this life.
I love them so much that once I’ve decided I’m going to fix an artichoke, I rarely am patient enough to do anything with them other than microwave them and throw them on a plate.
Buuut I already posted that recipe.
Since this only takes a couple minutes more, it’s my second favorite way to eat artichokes.
I got this idea from a great restaurant in Pasadena that serves grilled artichokes. You get a huge artichoke that’s been sliced down the middle, absolutely covered in oil, with the sides pressed in some kind of super-peppery grill seasoning, and then it’s grilled flat side down. It’s fantastic.
My version:
serves 1
1 medium globe artichoke
1 t oil (I used roasted garlic olive oil! YUM!)
1 t grill seasoning or herb mix of choice (Spike seasoning + lots of crushed black pepper is amaaaaazing)
First you have to trim up your artichoke! Cut off the stem, the top 1/3 of the leaves, and trim any spiky leaves left, and slice it in half. Fill a microwave safe bowl with about an inch of water, place the artichoke in the water, and microwave on high for about 8 minutes – it will depend on your microwave. When an outer leaf easily pulls off, it’s done.
Drain your artichoke pretty well as you heat a cast iron skillet or grill over medium high heat. Brush the cut side of the artichoke with oil, then very thoroughly coat in the seasoning mixture. Cook with the seasoning side down until blackened and just barely starting to smoke.
Whew! You made it through the tantalizing process of waiting for the beloved artichoke to be done. Mmmmmm worth it 🙂
