Matcha Green Tea Breakfast Truffles

 
Now my breakfast truffles come with a little caffeine jolt!
 
Perhaps now they’re even more ideal fuel for an early-morning workout! 
 
 yields 12 truffles
1 C pitted dates
1/2 C dried apples
1 C cashews
1 T matcha green tea powder
1 1/2 t vanilla extract
 
If your dates and/or apples aren’t very soft, soak them in a cup of hot water for about 10 minutes and drain thoroughly before you make these.  
 
Grind cashews briefly in a food processor until coarsely ground.  Remove 1/4 C of the cashews and set aside – these are going to be the coating. 
 
 
Add the rest of your ingredients to the food processor and blend until thoroughly combined.  Scoop heaping tablespoons of the mixture (or whatever size you want!), roll into a ball, and then coat with the extra ground cashews.
 
 
While these may be a fairly unappetizing shade of army green beneath the cashew coating, they. taste. wonderful.  They’re mildly sweet and taste of vanilla, but a green tea flavor slowly creeps up on you as you’re chewing these yummy little antioxidant-rich energy balls!
 
 
Hmmmm I was addicted to my breakfast truffles before adding something with actual addictive qualities . . .  we may be entering dangerous territory here.

    These look very intriguing. I was just wondering if a serving size (for the nutrition facts) is a single truffle?

      Yes it is (so 1/12 of the recipe). I like to eat one before a morning workout or as a little snack, but sometimes I eat 2 of them and some fruit for a breakfast 🙂
