Peach Strawberry Rosemary Daiquiri

 
My final Juice & Smoothie Week post!  This is a weekend smoothie to end my juice and smoothie week right!  Obviously, if you omit the rum, this is still a smoothie. So it totally counts.
 
I hope you enjoyed my juice and smoothie week!  I thought it was a pretty fun and healthy way to celebrate hitting my 100th post on Monday 🙂 And my stocked freezer thanks me.
 
So here’s the last one! 
 
I think this is very summery!  Frozen blended fruit.  Fresh rosemary from my mom’s garden.  Spiked for a hot weekend sitting on your patio . . . ahhhhhhh.
 
 
serves 1
1/3 C water
1/3 C light rum
1/4 C fresh lemon juice
1 C frozen peaches
1 C frozen strawberries
2 sprigs fresh rosemary*
*this is one of those rare times when dried simply will not do.  We’re blending raw rosemary into the smoothie, so it must be fresh so it’s soft enough to blend without leaving gross crispy bits in your drink.
 
Blend.  (I definitely loved the ease of writing recipes this week: “juice” or “blend” is pretty simple!)
 

 

Funny note: the daiquiri in these pictures is toxic.  When I first wrote the recipe, I carefully thought about the proper liquid-to-fruit ratio and about how much alcohol is enough for a pretty big blended cocktail, and wrote it the way it is above.  When I was making it for pictures, I forgot that half the liquid was water, and I poured 2/3 C rum into this bad boy!  I poured the last gulp that wouldn’t fit in the glass straight into my mouth from the blender.  (Classy, I know.)  Yikes! 
 
I recommend measuring to avoid the toxic quantities of alcohol.  Kick back.  Happy weekend.
