I’m not sure I need to say anything else.
Here’s a super quick and simple recipe (and post) for you. This is one of my go-to snacks. Or a little treat to put on the side of a big salad for lunch or dinner. It’s fast, easy, healthy, but irresistible.
I mentioned before (in my portobello fry salad recipe) that truffle oil is a seriously clever investment. It is so flavorful that you only need a small amount to add delicious decadent flavor to anything.
serves 1
1 t truffle oil
1 very small shallot or just a couple tablespoons chopped onion
1 clove garlic, minced
1 C mushrooms of choice
1 slice whole grain bread
Heat oil in a small skillet over medium-high heat. Add shallot and cook until translucent. Then add garlic and mushrooms and cook just a few minutes (or however you like mushrooms best).
Meanwhile, toast your slice of bread.
Top toast with mushrooms! There you have it.
