This is one of my favorite and most commonly consumed breakfasts!
It’s really more of a formula than a recipe. Any leftover whole grain + any non-dairy milk. Microwave. Add coconut milk + berries + nuts + shredded coconut + dried fruit + maple syrup/agave + vanilla bean/flavored extracts + chocolate chips/carob (for a breakfast treat) + spices = quick and easy breakfast.
Well, maybe not all of those. It’s easy to go overboard.
But you get the formula, right?
I’ve made one of many possible varieties to demonstrate this lovely formula. Coconut + berries. Yum.
serves 1
3/4 C cooked brown rice
1/2 C unsweetened vanilla almond milk
1 t maple syrup
3/4 C mixed berries
2 T shredded unsweetened coconut
1 T light coconut milk
Combine rice and milk in a bowl. Microwave for 1 minute on high. Stir in maple syrup. Sprinkle berries and coconut on top. Drizzle with coconut milk.
An easy solution for those of you who eat breakfast on-the-go, or once you get to work: combine everything in a mason jar or other storage container the night before. In the morning, just grab and go, and microwave the whole thing when you’re at work (or microwave and then go, but this isn’t exactly an eat-in-your-car meal, so please wait until you’re out of the car to eat). The berries will burst in the microwave, and you’ll have oozy berry juice mixed into your cereal too. Nothing wrong with that!
