Pot Sticker Stir-Fry

 


That’s right, potstickers in a stir fry! 

I first saw this idea on Eat This, Not That.  I think I had it for lunch five days a week for two months after that.  So addictive.


Plus I love a fun meal that takes minutes to make!  You can use the sauce packets that come with your potstickers instead of making your own.  Even faster.  🙂 

serves 2
12 frozen vegetable potstickers
2 C sugar snap peas
2 t canola oil
1/4 C reduced sodium soy sauce
1 T agave nectar
1 T chili garlic sauce


Bring a pot of water to boil.  Add in the peas for just a minute, then remove and put in a bowl of ice water.  Then boil the potstickers until soft.  Whisk the last 3 ingredients together and set aside.

Meanwhile, heat oil in a large frying pan over medium heat.  Add potstickers flat side down and leave them alone for about two minutes to form a crust.  Then add peas and cook, stirring frequently, for about 3 minutes.  Add sauce and cook for another 2 minutes.

      Thanks! I figure potstickers as a fairly guilt-free meal just means an excuse to eat more of them! Mmmmm.
