Sesame Salad w/ Teriyaki Baked Tofu

  
Wow.  I had drafted the intro to this post awhile ago before I actually tested the recipe, but totally had to delete that whole thing because it was not. enthusiastic. enough.  
 
I am pretty damn proud of this.  In the recent past, I quickly transitioned from tofu-hater-just-due-to-fear to tofu-lover.  But I am still really surprised at how much I love this. 
I was trying to replicate the Trader Joe’s teriyaki baked tofu because it’s delicious but more expensive than I think it should be.  And I don’t have a very convenient TJ’s near me (sad, right?!) 
 
Ummmm I like mine better.  I hope you do too 🙂
 
teriyaki baked tofu:
serves 2
1 T sesame oil
2 T brown sugar
3 T soy sauce
2 T seasoned rice vinegar
1 T fresh ginger, finely minced
2 cloves garlic, finely minced
4 oz tofu
 
Mix all ingredients except tofu together.  Thinly slice the tofu, then marinate it in the teriyaki sauce for at least 20 minutes.  Bake at 400 degrees for about 30-40 minutes, flipping halfway in between.  You want a nice browned crust on each side. 
 
 
Don’t burn your tongue while devouring this fantastic tofu!  Yes.  I said devour and tofu in the same sentence.  It happens.
 
Since we put so much effort into the tofu, the dressing for this salad is a piece of cake.  This is a nice light vinaigrette.  If you want something a little richer and creamier, add a couple teaspoons of peanut butter to the dressing! 
 
sesame dressing:
serves 2 
1 t toasted sesame oil
2 t lime juice
1 t agave
salad:
serves 2
1/2 carrot, shredded
1/4 red onion, thinly sliced
1 T sesame seeds
4 C butter lettuce
tofu & dressing recipes above
 
Toss your salad together and enjoy!

    This is delicious! We brought it to a neighborhood potluck where we were the only vegans, and everyone loved it!
