Smoky Sauteed Carrots

 
You know those days when you’ve planned to make a delicious meal for dinner, you’re cooking, getting excited for the deliciousness you put so much thought and effort into.  Then you realize you completely neglected a vegetable for your meal.
 
Don’t act like you don’t do that.  We all do.  It just happens sometimes.
 
So what do you normally do?  Either say forget it, or throw a handful of plain lettuce on a plate with a bottled dressing.
 
Sauteed carrots are my go-to alternative to that boring pile of lettuce.  They take just a few minutes of effort, and are something you can easily change to suit your tastes.  This is my mild smoky variety, which I think pairs pretty well with anything.  But you can sub the spices for anything you want, and adjust the amount of sugar (which you can replace with any of your favorite sweetener) to suit your palate!
 
 
serves 1
2 t Earth Balance
2 large carrots, thinly sliced
3/4 C water
pinch smoked sea salt
3/4 t cumin
1/2 t coriander
2 t brown sugar
 
Melt Earth Balance in a medium skillet over medium heat.  Add carrots and toss to coat in the melted buttery goodness.  Add the rest of the ingredients, and spread the carrots out into an even layer.  You want enough water to just barely cover the carrots.  Simmer until the carrots are tender and the water evaporates.  Toward the end, stir the carrots around just once or twice to make sure they’re evenly coated in the seasonings.
I topped with some chopped scallions and curry-spiced almonds.  The extra crunch from the nuts adds soooo much.  Love it.  
 
 
This smoky veggie complemented the yummy salad I made with some tempeh strips in my new coconut tempeh breading (note: the breading is a bit overwhelming on strips, I’d stick to nuggets).  I definitely recommend that – and look!  A delicious smoky sweet meal that is like 75% veggies.  Nothing wrong with that.
