S’mores Brownies + Baby Shower

It’s baby shower time!  I told y’all that my niece Molly was born last week, but I think I left out that she was over a month early.  So we just had the baby shower.  🙂

I was in charge of food.  Der.

So what do you make for a camping-themed baby shower?  Ummmm s’mores.  What do you make for a baby shower when you don’t want a fire hazard?  S’mores brownies.  (Although full disclosure, a friend of mine actually did catch these on fire once – be careful with marshmallows under your broiler!!!)


I made these a good amount pre-veganism, but this was my first vegan batch!  I could not be happier with the result.

Plus I eat a lot healthier now than I did last time I made these, so I wanted to lighten the recipe a bit.  Black bean brownies it is.  Nobody could tell.  Nobody knows.  Until now.


They are just as creamy and decadent as brownies loaded with white flour and fat.  But they are not. 

serves 12
1 1/2 C graham crackers of choice (I used Annie’s cinnamon bunny grahams – they do have honey in them though)
3 T Earth Balance margarine, melted
1 can black beans, drained and rinsed
3/4 C whole wheat pastry flour
3/4 C sugar*
1/2 C unsweetened vanilla almond milk
1 t vanilla extract
3/4 t baking soda
1 1/2 t baking powder
1/3 C cocoa powder (I used mostly special dark powder plus a little leftover normal, and that was perfect!)
tiny pinch cinnamon
1 bag Dandies marshmallows
*the brownie part of this dessert is actually not very sweet at all.  I think it balances nicely with the cookie crust and marshmallow topper, but feel free to change them.  Taste the batter to decide if you might want them sweeter, and add up to another 3/4 C sugar.

Preheat oven to 375 degrees.  Crush graham crackers to a crumb consistency, then stir in melted Earth Balance.  Press into the bottom of an oil-sprayed 8×8 baking dish.  Bake for about 5-7 minutes until slightly golden.  Remove from the oven.

While the crust is baking, make the brownies.  Blend black beans into a smooth puree.  Then stir in the rest of the ingredients.  Pour on top of the crust.  Bake for about 35-40 minutes, until cooked through. 


Turn on the broiler.  Top the brownies with the marshmallows, and pop under the broiler for about 3-5 minutes, until golden on top.  Watch them closely, cause they go from perfect to burned in a few seconds – I got mine out in the nick of time!  This is also the time when you risk starting a fire, so don’t put them too close to the broiler, and keep an eye on them.

They are rather of awesome 🙂 

The rest of the shower treats included pigs in blankets, a bowl of granola bar bites, popcorn, chips and guac.  This was actually an incredibly simple menu for the shower.  A stress-free menu is exactly what I wanted.  Plus it was all vegan for a room full of non-vegans, and everyone loved the food.  Happy 🙂


There were so many ridiculously adorable things my new baby niece is spoiled with.  Can’t wait till she can come home from the hospital to enjoy it all!
