Sweet Almond Dark Hot Chocolate

Happy first day of a long holiday weekend!  At least I hope it is for all of you.  If not, please feel free to drown your sorrows in a gigantic mug of this awesome cocoa.  Kahlua goes well with it if necessary.

A decadent holiday treat.  In a mug.  Cozy and comforting and sweet. 


I just love love love this new cocoa recipe.  I think I’ll have it about five times between Christmas Eve and Christmas day. 

Special dark cocoa.  Your favorite non-dairy milk.  Almond paste.  Yup. 


serves 1
1 C non-dairy milk of choice*
1 1/2 T cocoa powder (I used Hershey’s Special Dark, which was an early Christmas present!  Perfect for cocoa!)
1/2 t maple syrup
1 T almond paste or marzipan
1/2 t vanilla extract
1/2 t almond extract
optional: dash of cinnamon
garnish: rice whip, cacao nibs, and more almond paste!

*I used unsweetened vanilla almond milk.  I’m not going to lie, I did it because it’s the lowest calorie milk I buy, and I really wanted to feel a little less guilty about the seriously excessive amount of rice whip I piled on top.  I’m pretty happy with that decision.


Chop almond paste up into small pieces.  Mix all ingredients except garnishes in a small saucepan and heat over low heat, whisking frequently until the cocoa is hot and the almond paste has melted.

Top with your favorite garnishes.
