I have an awesome simple combination for you. Dried cranberries and raw pepitas (pumpkin seeds.) They are a wonderful combination that I first started eating as a trail mix sold by a fruit-and-nuts stand at a farmer’s market.
You ready for this incredibly difficult trail mix recipe? Are you sure? Combine equal parts pepitas and dried cranberries. Brainless.
I made a nice big batch of this trail mix for snacking, but thought I’d use part of it to make a new breakfast truffle flavor! Breakfast truffles are my favorite little pre-workout energy bites. Check out all my other flavors here.
Though I do have to admit – just before I blended up the truffles, I realized what an unpleasant color combination green pepitas and pink-red cranberries make. Not the most beautiful batch of truffles I’ve made. But they’re still a delicious treat or energy bite!
yields 11 truffles
1 C dates
1 C trail mix recipe above (or 1/2 C dried cranberries + 1/2 C dried pepitas, if you’re a little mathematically challenged)
1/2 t vanilla extract
1/2 C almonds
3 T extra pepitas (to coat the truffles)
Combine everything except extra pepitas in a food processor until it’s a sticky consistency that you can roll in a ball. Roll into balls! I use one of those small ice cream scoops to measure them out – works really well!
Crush the extra pepitas in a food processor, and roll the truffles to coat.
