Happy 2013!
I’m guessing that many of you have made some New Year’s resolutions to eat healthier, maybe lose some weight, cut back on sweets/salt/oil/whatever your vice is. I’ve got a handful of light and healthy recipes lined up for you for January.
I was planning to start with something uber healthy like a green juice or smoothie, maybe some roasted veggies . . .
Then I thought: why not start with this awesome new find that tastes like a fattening, oily, decadent restaurant stir-fry, but is actually pretty light? Now that’s my kind of food. Plus I just had this new Mandarin Orange frozen TJ’s dish for the first time over the holidays, and LOVE it.
When you feel like you’re about to break your resolution, turn to this recipe.
serves 2
1 package Trader Joe’s Chicken-less Mandarin Orange Morsels
1/2 onion, chopped
2 carrots, chopped
2 cloves garlic, minced
cilantro for garnish
Preheat oven to 425 degrees. Put chicken-less nuggets on a foil-lined tray and pop in the oven. Cook for about 15-18 minutes, flipping once halfway through. Meanwhile, put the sauce packet in a bowl of warm water to thaw.
Place a large nonstick skillet over medium-high heat. Add a couple tablespoons of water, then add the onion and saute until softened, about 5 minutes. Add the carrots and some more water. If you like your carrots on the softer side, cover the skillet and they’ll steam for about 5 minutes. Then add the garlic for the last minute.
Toss chicken-less bites, onion and carrot saute, and sauce packet in a large bowl and toss. Serve with some rice and garnish with cilantro.
So satisfying.
