Happy almost-weekend, folks!
I hope most of you haven’t spent this week sick like I have. Though it has made the week go by quickly in a haze of cough medicine and fuzzy-brain-syndrome.
And now it’s Thursday evening already, and tomorrow’s Friday! So I’m plotting another batch of this beautiful cocktail I made last weekend. Because I will insist on being healthy this weekend, and drinking this awesome concoction.
Lavender simple syrup. Plus rum. Prosecco. Mint.
It’s just so happy. And spring-like. We can pretend it’s spring. Will it to be here, right?
Then we can say goodbye to all the cough medicine and insane amount of tea that we’ve consumed this cold/flu season (if you’re anything like me.)
lavender simple syrup:
1/4 C raw sugar
1/4 C water
3 T dried lavender
Place everything in a small saucepan and turn on low heat. Stir occasionally, until sugar dissolves. Remove from heat and allow to coo completely. Then strain out lavender.
the whole drink:
serves 1
1 oz rum
several fresh mint leaves
1 t lavender syrup
6 oz prosecco
Muddle mint and rum in a glass. Add lavender syrup, prosecco, and stir!
