Here’s a simple recipe for a delicious light fruit salad. We’re starting to see some glimpses of spring around here – lots of trees blossoming, a couple nice sunny warm days, and more fruit filling up the produce aisle. With that comes spring recipes!
Hope you enjoy this colorful salad with beautiful spring fruit and some rich creamy avocado and macadamia nuts.
serves 2
1 grapefruit
1 mango
1/2 avocado
4 T macadamia nuts
2 t maple syrup
2 t olive oil
First, segment your grapefruit. Cut both ends off, then cut all the rind off. Then take your knife and cut in between all of the little white membranes so you get beautiful pieces of grapefruit. Do this over a bowl so that you keep all the grapefruit juice that comes out as you cut the fruit. Save that and we’ll use it as for the dressing on our salad!
Then cut your avocado and mango. I have a little tutorial on how to cut a mango here.
Mix the reserved grapefruit juice with the maple syrup and olive oil. Toss with all the fruit and top with macadamia nuts.
Tastes like spring!
