Sorry folks, getting a little too excited about spring here! This was my first winter back in Northern California after several years in Southern California, and although I handled it much better than I anticipated, I am soooo ready for the return of my friend the sun. It was also my first winter working full time – ever! (thanks to years of college and grad school!), so I was very taken aback by that whole go-to-work-in-the-dark, leave-work-in-the-dark thing. NOT a fan.
I am CRAZY happy about having longer days. There are no words.
Longer days. Warmer days. More time outside. Lighter foods. Happier skin. Sundresses. Pools. Beach days. Humongous quantities of fruit. Wine tasting trips. The smell of sunscreen. Picnics. Farmer’s markets. Hikes.
Gah! So much excitement!!!
I’m also really excited to remember what it feels like to be motivated to workout. With that comes some serious consumption of my breakfast truffles, my favorite pre-workout snack (whether it’s actually in the morning or after work, these are great before a workout.) So get ready to see some new flavors! I made TWO batches this weekend, and I’m going to keep them coming!
First up is a tropical medley of pineapple, coconut, and macadamia nuts. (Can you just look at how pretty dried pineapple is?! Looks like little flowers!)
yields 10 truffles
1 C macadamia nuts
1 C dried unsweetened coconut
3/4 C dried pineapple*
1 C dates
*you will probably need to soak these in hot water for 10 minutes to make them soft enough to blend
Blend coconut in food processor and then take about 4 tablespoons out. Set that aside in a shallow bowl to roll your breakfast truffles in it.
Then add everything else and blend until combined and sticky. Take out mixture by a really heaping tablespoon, roll into a ball, and coat with coconut.
You’re done!
