Vegan whole wheat cheesy crackers!!! This is not my recipe, it is from the incredible blog Fork & Beans, but it is soooo delicious I had to make sure to post this.
I’ve had this recipe flagged for a really long time and haven’t gotten around to it because I assumed that making my own crackers would be an extensive process that I have not had time for.
Then on Sunday night, I felt that pang of guilt for all the things I should have accomplished over the weekend but didn’t. I had the urge to do something useful, something productive. But my to-do list was boring.
This scenario always leads me into the kitchen. Making yummy food totally counts as being a useful human being. So I thought I’d finally embark upon the cheez-it making process!
Turns out, it’s incredibly fast and easy! Especially after I decided that I don’t need these to look like Cheez-Its and just started cutting them quickly and forgetting about poking holes in them.
Of course, that didn’t use up my should-be-productive time. Lame.

Quick note: the original recipe is gluten-free. Since I’m not gluten intolerant, I made a couple quick changes: I used whole wheat pastry flour instead of gluten-free, and skipped the xantham gum (that is used with gluten free flours to achieve the same texture as other flours.) You could do either way, or you could use regular all purpose flour instead of whole wheat – but you really can’t tell that these are whole wheat, and they more nutritious that way!
