Avocado Wasabi Cole Slaw

 

I bought myself a long-overdue awesome present yesterday!


Isn’t he beautiful?  (Please excuse the bad backlit phone pic – that’s waaaay photoshopped too! Bleh!)

I think so. 

Of course, I got overly excited about it and had to use to make my dinner last night even though I really didn’t need to use this big guy for the job.  But it did help me make a delicious new creation!

Cole slaw free of mayo.  Instead, it’s coated with avocadoWasabi-spiked avocado.

Soooo happy.


serves 2
1 avocado1 t mustard (I used spicy brown, but dijon or plain yellow would work too)
1 t wasabi powder
1 clove garlic
2 t champagne vinegar (white wine vinegar would work too)
salt and pepper to taste
2 C shredded cole slaw (I had a store-bought bag but obviously used my new toy to add some extra carrots!)

Blend everything except the cole slaw together (in a food processor!  Okay, my little 3-cup machine actually would have worked perfectly for this.)  Then toss with cole slaw mix.

So easy.  And really delicious.

Eat by itself as a salad or pop it into a pita with a veggie burger like I did!  Yum!

    I have the same food processor (though I’m jealous of the case yours has for the accessories) and I use it several times a week! Its especially fun to use it to grate veggies so you could use it for that in your slaw too!

    I am loving my new toy, I wish I’d bought it a long time ago. It really cuts down on cooking time a lot, and since I cook so much I love that. I will definitely start shredding my own veggies, too! 🙂
