If you haven’t noticed, I loooove savory (and/or spicy) and sweet dishes. So full of flavor!
This may be one of my favorite creations yet!
I thought it would be fun to cook rice in pineapple juice. Well, I was right. Fact.
But it makes for super sweet rice – you could really eat this rice for dessert. So I needed to pair it with something to make it a savory meal for dinner.
Jerk seasoned lentils!
Oh, and the cherry-on-top: this whole recipe is six ingredients. Including garnish. So easy to pull together for a yummy weeknight meal.
pineapple rice:
serves 4
1 C brown rice
2 C pineapple juice
1/2 C water
Bring pineapple juice and water to a boil. Add rice, reduce heat, cover, and simmer until rice is cooked through and the juice is absorbed. Or throw it all in a rice cooker and turn it on!

jerk seasoned lentils
serves 4
1 C lentils
2 1/2 t jerk seasoning, divided
Bring a large pot of water to a boil. Add lentils (rinse them first!) and 1 teaspoon of the jerk seasoning. Cook for about 30 minutes until tender. Drain, then mix in the rest of the jerk seasoning.
for garnish:
chopped red onion
chopped cilantro
I paired this with some roasted jerk-seasoned broccoli (which I overdid a little bit so left it out of the pictures). I could eat this meal repeatedly. For reals.
