Busy Woman’s Iced Mocha

GUYS, GUESS WHAT I did yesterday!!!

I gave notice at work! 

Yikes. 

I got a great opportunity at a different firm.  I’ll be much more legit-lawyer than I am at my current job, so I’m really excited.  Plus mortified. 

I have two different offices right now, so had to give notice to two bosses and tell a handful of coworkers.  It’s strangely exhausting.  
 
New job starts next month, so I’ve got time to wrap things up and say my goodbyes and really work myself up into a ball of anxiety.  Excellent.  

Fortunately, food calms me down, so let’s get back to that. 

So this mocha. 

I love making myself a nice coffee-house-style coffee or tea drink in the mornings.  It is one of my favorite things to carve out a little time for in a hectic morning.  If I have the time, a soy cappuccino, a vanilla matcha latte, or a yummy chai steamer (sans pumpkin lately, I’m pretty much a seasonal pumpkin eater) usually hit the spot.

But sometimes you just don’t have the time.  So here’s one simple step so you can make a vegan mocha on-the-go or at work: freeze chocolate almond (or whatever) milk ice cubes. 


Yes.  It’s so much fun. 

That way if you have the time you can make a couple shots of espresso in the morning and throw them on top.  If you’re running late, I’m guessing plain black coffee is pretty widely available to you, so take your ice cubes to work and pour some coffee on top and boring black office coffee becomes a fancy coffee house treat! 

I’m kind of a fan.  

One catch: you really need to stir it.  Grab a straw on the way too!!!


More ideas: These are also helpful if you still feel like taking the time to make a drink – blend them up with some espresso for a homemade frozen blended drink with WAY less fat/calories/other crap as you would find in a coffee house.  OR for the nightcap version: decaf coffee, a spoonful of extra cocoa powder for extra chocolately goodness and a big glug or two of Frangelico (or amaretto or kahlua.)  DANG that’s good.
