Overnight Steel Cut Oats Muesli

Did you know you can have overnight oats with steel cut oats?  You can eat them raw.  Just need to soak ’em and soften ’em!

It’s a truly terrific way to start your day.  This little bowl of goodies is so darn filling! 


Quick recipe, quick post!  Nothing more to say except seriously try this.  Seriously.  It’s yummy. 

serves 1
1/3 C steel cut oats
2/3 C soy milk
1 T goji berries
1 T pure maple syrup
1 T dried blueberries
1/4 C fresh blueberries
1 T unsweetened dried coconut
1 T raw pecans

Soak oats, soy milk, and goji berries in a bowl overnight (you can soak them for a good 12 hours or so – I mix them up after dinner and refrigerate them til the morning.)  You don’t have to include the goji berries, especially if you can find soft ones, but I like them softened in the milk overnight.  In the morning, mix all the rest of the ingredients in (or whatever your favorite oatmeal toppings are!)
