Here’s an easy delicious little raw treat!
I made a matcha-free version of these last week (but ate them all before I took any pictures. Oops.) This morning I woke up needing a small treat before my workout, which normally would be my breakfast truffles. For a special treat, I whipped up some of these!
Love them. It’s like cookie dough with a little taste of green tea. Breakfast, dessert, or a mid-day snack. Plus they’re raw and full of nutritious energy-dense foods. Yum. They do turn out a little on the army-green side, but you forget all about that on the first bite.
yields 12 bites
1/2 C rolled oats
1/2 C cashew butter
2 T pure maple syrup
1 t vanilla extract
1 t matcha tea powder
1/3 C cacao nibs
In a blender, combine everything except nibs until smooth. Then add the nibs and pulse just until combined. Roll into balls.
So easy. So delicious. One of these was the perfect fuel for my workout this morning!
