Sweetened Condensed Soy Milk + Chai Coffee Latte

There have been a lot of times when I’ve seen a recipe or wanted to make something and thought I’d really like to have sweetened condensed soy milk. 
But when I saw this simple and delicious looking recipe for a chai spiced latte (with coffee, not tea) from Giada DeLaurentiis, it was more of a necessity
So I thought I’d try out making some sweetened condensed soy milk and it was shockingly simple.  Simmer soy milk with sugar, then chill it.  Ummmm that’s it?  Why haven’t I tried this earlier? 

Giada’s recipe for a chai spiced latte was equally simple and delicious.  So warming and happy.  It makes it feel like fall.  She mixed coffee grounds with cinnamon, cardamom, ginger, and your other typical chai spices, steeped them in a French press. 

The magic was to sweeten and add milk to turn it to a sweet latte, she added sweetened condensed milk. 

Now that’s a must-have.  So here’s how!

sweetened condensed soy milk:
serves 4
2 C sweetened vanilla soy milk
1/4 C raw sugar

Combine soy milk and sugar in a saucepan over medium-low heat.  Whisk occasionally and simmer for 30 minutes.  Pour into a glass container and refrigerate.  It thickens up a lot as it cools, so don’t be surprised if it looks too thin at first.
