Back with a quasi-recipe, folks!
I have been sipping on one favorite drink most of the summer: mint and honey tea. Yes, I eat honey. Sometimes. I’m a moody vegan when it comes to honey, I can’t really make up my mind, so I just eat honey where it’s harder to avoid or when I really really like it.
If you abstain from honey, don’t worry! This tea is amaaaazing with maple syrup or agave too. I haven’t tried yet, but I’ll bet coconut nectar would be awesome as well.
I just go for honey because of those bottled Sweet Leaf granny teas. That mint and honey bottled tea is incredible. Just the right amount of sweetness for me, refreshing mint flavor.
So cooling on a hot summer day.
Here’s a simple recipe to make that tea at home. Plus I’m adding a really difficult bonus-trick: blend it with ice. Slushie tea results!

yields 6 servings
6 C water
2 green tea bags
1/2 bunch fresh mint
3 T honey (or sweetener of your choice)
Bring water to a boil. Add the rest of the ingredients, stir, and let steep for about 5 minutes. Remove the mint and tea bags, stir again to make sure the honey is well incorporated, and you’re done!
Chill in your fridge. Blend with ice for my slushie version!
