I told you during my Daily Things yesterday that I’m going to try to celebrate the end of summer a little more and appreciate it while it still lasts. So even though I can’t get pictures of tall boots, scarves, pumpkins, and orange leaves out of my mind, I’m going to focus on the fact that it’s a blistering 91 degrees here today and make a couple iced drinks that I had planned on making this summer.
Right now it’s rich and delicious Saturday morning coffee time.
When I was studying for the bar, I studied at a Starbucks pretty often. You know how you need that perfect study environment? I found it. A couple friends and I staked it out. We each had our go-to order that we drank 95% of the time that summer while we were studying. Mine was an extra dry soy cappuccino (a tip for cappuccino fans out there – if you order a cappuccino at Starbucks they tend to make it more like a latte. Order extra dry or order a short and they’ll make it just right.) If I neglected to say “extra dry” the barristas corrected me because they knew what my order really was.
Anyway, we all made an exception for a solid week when the toasted coconut mocha Frappuccino came out. Daaaaang was it good. Then we looked up the nutritional information and we all stopped that habit right away.
Finally, over two years after finishing that damn test and all my studying, I made a healthy version with this toasted coconut mocha slushie. It’s actually pretty nutritious.
I used raw cacao powder. Fresh coconut meat. Coconut water. Seriously! Big improvement. Hello, antioxidants, fiber, and some serious hydrating electrolyte power! Don’t need to feel guilty about this one.
- 1/2 C shredded dried coconut
- 1/2 C fresh coconut meat
- 1 C coconut water
- 1 C ice cubes
- 1 T raw cacao powder
- 1 T pure maple syrup
- 1 t vanilla extract
- 1/2 t coconut extract
- 2 shots espresso
- optional: chocolate or vanilla protein powder (if you want to have this as breakfast!)
- Heat a dry nonstick skillet over medium-high heat. Add the dried coconut and stir frequently until lightly toasted. Remove a small bit of the toasted coconut and set aside to top the slushie.
- Combine everything else and blend it all up! Top with the remaining toasted dried coconut.
- Calories: 409; Calories from Fat: 247; Total Fat: 27.5g; Saturated Fat: 24.1g; Sodium: 44mg; Total Carbohydrates: 40.2g; Dietary Fiber: 8.8g; Sugars: 28.7g; Protein: 3.7g
Dessert variety: You can easily drink this for dessert since it’s so creamy and delicious. Maybe top with a little rice whip first. You could also add a splash of coconut milk for some extra decadence. I’ll be trying that 🙂
