Apple Pie Sweet Potato Breakfast

I had such a fun Saturday morning breakfast this weekend!  I was really tempted to eat a slice of apple pie for breakfast.  But sometimes I just want to cook.  Okay, a lot of the time.  So I made myself a pie-reminiscent breakfast.  But with a bit more nutrition too 🙂 

I baked a sweet potato in the microwave while I made a fast skillet version of apple pie filling.  Topped the potato with the apple and with some maple syrup (kind of a lot of maple syrup….)

serves 2*
1 sweet potato
1 apple, peeled and thinly sliced
2 t Earth Balance margarine (or coconut oil would probably be great too!)
1/2 t ground cinnamon
2 t maple syrup, plus more to top with!
*with a soy latte on the side, I couldn’t finish this, though it’s probably a decent big weekend breakfast for one

Poke sweet potato with a fork about 10 times. Then microwave on high for 5-8 minutes, until fork tender.  Slice it down the middle and set it aside.

Meanwhile, melt margarine in a large nonstick skillet and add the apple and cinnamon.  Saute, stirring frequently, until the apples are softened.  For the last 30 seconds, mix in the maple syrup and let it turn sticky and coat the apple slices.

Add apple filling on top of sweet potato. Top with more maple syrup if you want to (and trust me, you want to.)
