Brown Sugar & Spice Roasted Sweet Potatoes

Quickie post with my sweet potato recipe from my friends Thanksgiving.  Simple and yummy!

I really wanted to make sage-spiced sweet potato rounds, but couldn’t find ground sage! So frustrating.  So at the last minute, I just threw a few things in a bowl and tossed the potatoes up.  Turned out wonderful. 

serves 12
4 large yams (sweet potatoes/yams/etc would all work – I used the classic golden yams.), sliced 1/2 inch thick
1/4 C coconut oil, melted
3 T brown sugar
1 t ground cumin
1/4 t small pinch ground cayenne
1/2 t onion powder

Preheat oven to 400 degrees.

Toss all ingredients in a big bowl together.  Put potatoes in a single layer on a foil-lined baking dish.  Roast for 50 minutes, flipping over halfway in between.  They’re done when they are fork tender.

These will definitely become a new favorite, both during the holiday season and after!
